BBQ Shrimp Salad Recipe

1 can Sweet Corn, rinsed                 1 Head Romaine Lettuce

1 can Black Beans, rinsed                10 Grape Tomatoes, halved

Ranch Dressing                                20 Medium Shrimp, peeled

Juice and zest of ½ lime                    2 TBS G&M BBQ Rib Rub

¼ Cup Shredded Parmesan                                                

*Rinse and chop Romaine. Layer with beans, corn and tomatoes, dividing them equally among 4 bowls.

*Mix lime juice and zest with Ranch dressing

*Heat pan to medium high heat and drizzle with 1 tsp olive oil. Add shrimp and sprinkle with BBQ seasoning. Cook, stirring frequently, for 3-4 minutes.

*Top each salad with shrimp and parmesan and drizzle with dressing.
